I'm just going to stay on the couch all day.

I planned to sit down and write about Brooks's first birthday party that we had this past weekend. 
It was awesome, by the way.
But I haven't even gone through all the pictures yet and I'm just not feeling it.
I wanted to keep up with the "Blog Everyday in May" Challenge, but obviously doing anything everyday is not for me.
I would like to update you all on how the Revolt Fitness plan is doing great things for my body, but even typing about it makes my body cringe.
I did loose another 1" off my thighs though, so high five.
But I'm just out of it today. And yesterday. And the day before that.
Why you ask?
Because for the first time in a year and 9 months, my monthly visitor has returned.
Too much information? Sorry, it's LITERALLY all I can think about.
I don't know if it's because it's been so long and I just forgot how awful it was, or if it really is worse, but this is the worst period of my life! 
Cramps times a million.
Headaches like whoa.
Tired beyond belief. 
Wanting to punch everyone, including small children, in the face? Check.

Has anyone else experienced this after babies? I thought not having to deal with it for so long was a blessing. But THIS is not worth it!

But to leave you on a happier note (and with a better mental image than me curled up on the couch close to tears) heres a recent Photo Booth session of me and my 1 year old. Birthday pics to come soon!

Life has been INSANE...but I'm still REVOLTING!

Hope everyone had a terrific Mother's Day!! 
Remember when I said I was going to blog everyday in May?
I was clearly kidding.
I have been CRAZY busy the past couple of weeks!
The shop has been super busy, and I have been working overtime getting ready for Brooks first birthday party.
I can't believe my baby boy will be 1 on Wednesday...where has the time gone?? 
But I'm really looking forward to the party, and can't wait to share all the details of his Yo Gabba Gabba party. And while I've got big plans for all the snacks we will have, I am going to have to try REALLY hard to not eat everything in sight, since I'm still working hard to keep up with the Revolt Fitness program.
Although I haven't lost any weight in the 2 weeks since I started, I can definitely see my body becoming more toned, which was my goal.
I've lost 2.5" off my waist and 2" of my thighs. So that rocks!
And that was even with eating one of these:
Why would someone doing a fitness program decide that they should make caramel apples for her son's teachers on Teachers Appreciation Day? And why would said person make 2 extra (reasoning that should one turn out badly, she needed extras)? You can't just leave 2 extra caramel apples in the fridge. They MUST be eaten.

What I'm afraid of...

I have been slackin on this whole blog everyday in May challenge. 
But today's was easy:
Day 7, Tuesday: The thing(s) you're most afraid of.

While I'm sure 90% of women (and plenty of men) will say the same thing, my big fear is spiders.  I really don't like bugs of any kind and will have a mini stroke if anything with 4+ legs gets on me. But spiders are on a whole nother level.

I can think of 2 situations where I was tormented by these demons.

1. When I was in college I worked at a furniture retail store, and it was time to do a floor set, which means working late and rearranging the entire store. It was a bunch of girls and a couple of gay guys that worked there, so when we moved a piece of furniture to find a HUGE spider, we were all a little panicked. Well our manager, trying to act all "no big deal, let's get back to work", stomps on it. Little did we know that the thing was huge because it was pregnant with 1,500,678 baby spiders!! And when she stomped, they went everywhere. The whole group of us (all adults, mind you) were on top of something in 2.5 seconds, screaming and acting like the floor had turned to lava and if we touched it we would die instantly. Pretty sure we waited until not another baby spider could be seen before we dared to get down, and then the rest of the night was a bust because we were all to scared to move anything.
Wussies.

2. After that job I went to work at a place that made granite countertops. The building was out in the sticks, surrounded by trees and not much else. It was here that I first encountered the wolf spider. Do you know of it?
If not, I don't want to terrify you or cause you to break your computer, so I won't post a picture.

These spiders are huge. And hairy. And like all their little friends, sneaky as hell.
There is nothing like typing happily away on your computer, only to look down and see a mini tarantula inches from your foot. 
You WILL pee your pants.
I never got used to it (DUH!) and it was pretty high on my list of reasons to quit that job.

Black Bean & Sweet Sriracha Marinated Butternut Squash Quesadillas - GOYA Foods review & GIVEAWAY!

Do you do anything special for Cinco de Mayo? We started celebrating early here with quesadillas and mango margaritas last night!

GOYA Foods sent me their Healthy, Tasty, Affordable Latin Cooking cookbook, a can of their low sodium black beans, and a bottle of their extra virgin olive oil, and told me to recreate their black bean quesadilla recipe with my own twist.
Their original recipe (which can be found here) was a quick and easy meal that called for Pico de Gallo and cilantro to be mixed with the beans, then fried between 2 tortillas with cheese.

But like a weirdo, I don't like the pico. So I had to make some changes.

So here is what I came up with:
Black Bean & Sweet Sriracha Marinated Butternut Squash Quesadillas
with pickled red onions
That's a ridiculously long title.
 What you need:
1 small butternut squash, peeled and cubed into 1/4" pieces
2-3 tablespoons Sriracha (depending on how spicy you want it)
1 tablespoon honey
1 tablespoon apple cider vinegar
1 can GOYA  Low Sodium Black Beans, drained and rinsed and tossed with a teaspoon of Taco Seasoning
1 cup shredded Colby & Monterey Jack mix cheese
1/2 avocado
4 tortillas (I used homemade, but GOYA's 8" Flour Tortillas would be perfect)
1 tsp. GOYA Extra Virgin Olive Oil
1/2 red onion, thinly sliced
1 small GOYA Jalepeno Pepper, sliced
1/4 cup distilled white vinegar
1/4 cup water
1/4 cup sugar
1/2 teaspoon kosher salt
